there is oil pressure on the dash but what I'd like is to log the info in a file so I can review it after i drive the car. I don't like to keep looking at the gage and it is just instant reading so it is hard to see how it progresses over time.

FWIW your oil pressure should be at 4bar when you are @ 3,000 rpm... so if your tracking keep an eye on this... this will tell you the oil pressure/temp relationship and when you need to back off...
if while your tracking you take a reading @ 3000 rpm and your very close to 3 bar take a few cool down laps - it does wonders for oil temps and bringing pressure back up.... or just come into the pits and cool down for 30 min or so... if you care about your motor...
if your below 3 bar @ 3000 rpm then your running WAY too hot... all this assumes you have a full crankcase of oil with "full bars"

Where are you getting your information from? Per Porsche manual, normal HOT oil pressure for 996 is 3.5BAR at 5,000 RPM. I can post you the copy of the page in the owner's manual that says the same.

The owners manual is not the final word on oil pressure or much of anything else other than how to program the radio.
