Porsche recommends taking into consideration the climate you live in when selecting your oil weight. That said, the Porsche Dealer fill is 0W-40.
I would also factor in engine wear as well. Hot climate and a high mileage motor will require something heavier than 0W-40.
Cold climate and a newer motor could better tolerate a lower viscosity oil.
I would use 0W-40 as a baseline and go up and down from there depending on climate and wear on your motor.
For me here in Northern CA where winters are mild, I use 0W-40 in the winter, and since the summers can be warm, I'll switch to a 5W-40. My 996 has 56k miles.
