When I do my spring cleaning on my 996, I clean off the rotor hats, and then just hit them with some fresh primer grey. Here is a picture that shows that. I don't worry about masking the rotor face, just the caliper and center hub.
First time you drive the car, the pads will clean off the overspray on the rotors.

Yeah I would spend so so much time taping and masking before convincing myself I could spray near the car. I would probably do this (mine still haven't rusted) right before a compounding and polish, but I'm a wuss about spray paint near the car too.
I don't think anyone here hits the underside harder than Orient Express! The whole underbody is immaculate, truly a sight to behold.

When I got my car the rotor hats were all rusty. I cleaned them up with a wire brush on a drill then used a product called Target Cold Galvanizing Compound (made by Releaseall). You can get it as a spray but I have a quart of it so I just brushed it on. It's kind of a flat medium gray colour. It still looks good after a year including some winter driving.
