Great video, but was that turbo in the first video a tip? hmmmmmm...
Personally, I think the 911 pedal setup is perfect for heel-toe, though I have aluminum pedals and I positioned the brake slightly closer to the accelerator than the stock pedals. I do this 100% of the time, in fact, often double-clutch pretending like I'm stirring a real non-sync race transmission.
It's a sickness.

Walter Rohrl's happy feet
Heel/toe and left foot braking braking with Porsche's current test driver.
I'm surprised at how many people - especially Porsche drivers - that don't seem to know what the benefits of heel/toe are - or rev matching in general. It's faster, smoother, more fun, and keeps your gear box/synchros in good shape.
