Default Graphing engine parameters

I just installed a Bluetooth OBDLink MX+ adapter (Porschetech3 said its best, good enough for me) and am asking for some basic advice. Besides using it to overlay basic driving parameters onto front facing videos, the included app allows for more sophisticated graphing of a multitude of engine sensor/performance parameters, including MAF rate, O2 sensor readings, long and short term fuel trim, etc, all labeled as either SAE PIDS or calculated PIDS.

I am not a mechanic nor do i play one on TV, so what parameters would be of interest to graph. My car isn’t having any issues that I’m trying to diagnose but I’m trying to educate myself about engines and hope to use this tool to that end.

I'm not sure if your OBD shows it, but I found it interesting to graph the throttle input vs. actual values. I tried this once with my durametric and it was neat to see how different they were in various scenarios. Probably not of much use ongoing, but interesting from a learning/understanding perspective.

Still playing with available parameters. Went for a little 25 mile tri-oval jaunt this morning, watched MAF, O2 sensor readings and coolant temp, but this overlay is just speed:
