Oil gauge is jumping up and down

If it's jumping around with no change in RPM, no, that's not normal. Could be the sender.

As the car is it in her winter-rest I can’t test if it’s moving without any rpm
but I’m pretty sure the oilpreassure gauge doesn’t move without rpm.
only when i press the gas pedal and accelerate
but its more like pendling between 2,5-4 fast and a lot when I accelerate and deaccelerate.

My 996 oil pressure is far more sensitive to engine speed than my Corvette - but it's hard to guess whether what you're describing is normal.
Consider posting a video the next time you have access to the car...

I am thinking first...the oil pressure sender. Second, a sticky oil pressure relief valve. There is a reason they modified it to have the rounded end. Also, last oil change and filter change? Did you do it or did someone else...thinking a floating bypass valve in the stock canister.

My car has done this and I found the connection at oil sender was oxydized causing erratic operation of guage.There were no abnormal engine noises and it happened suddenly.I cleaned the connection and been working good.

Exactly the same thing with my car. A little contact cleaner, a little wire brushing....all good.

Update:
I cleaned the wire and connectors with contactspray, then the gauge wasnt jumping up and down. It went to full. But then sometimes it jumped down to 0. After a restart it went up to 5 again.
Ordered the oil sender unit and changed it (it was really tight and a pain in the ***, my hands looks like war).
Now its working perfect =)

Update:
