Here's a thought....
My "New to me" 03 Cab has what looks like 80% tread remaining tires in the front.
BUT, they are date coded 07....So, I am replacing them...what happens to the OLD tires?
I'm thinking that they are bought up by "recyclers" who then sell off any that "look" good.
So some uninformed s****k is going to buy 2 good looking tires for probably $40 a piece.....
THIS SUCKS....
I like to think of myself as a "Person who DOES THE RIGHT THING".....what to do?

If you want to be sure they get recycled instead of reused, just damage them beyond repair. Use a saw to make a huge cut in them that's not repairable. Then they'll get ground up and used as something other than a tire.

Lots of tire shops sell "used" tires for resell. Not a good idea in my opinion, but many people buy used tires. Another common recycle method is the old tires are ground into a mulch for rubber flooring or play surfaces.

I ultimately believe everyone is responsible for their own lot and choices in life. If someone wants to buy old used tires and drive around on them that’s their problem, not yours.

Except some people might not know that old tires can be dangerous. If someone knows this and still buys old tires then I agree it is their problem, but if there is a simple way from preventing the re-sale of used tires by the OP, like damaging them so they are recycled, I think that is a small step to take in protecting an unsuspecting consumer.

Tell the shop you are taking the old tires with you and then just drop them off at the landfill or look up a tire recycling tacitly that will take them to make rubber floor mats or something other than tires.

Not often, but OP's original premise was trying to make the world a slightly safer place by recycling 1 set of tires, so we're talking about infinitesimal changes here anyway. If avoiding a low-likelihood bad scenario is not worth bothering with, none of us would get vaccinations, buy insurance, look both ways before crossing the street, etc. I think OP's goal of getting unsafe tires off the road is a good one and I support it.

The good thing is not many people who buy used tires would have a vehicle that takes the sizes on a 996.
I donated a good set of tires from my daughter's Mazda to a local used tires place. They took some old tires off MG rims for me in the past for $5 cash. When I have been there, the cars they were servicing were mostly smaller foreign cars (Corolla, Mitsubishi, etc) and cheap US models (Chevy Cobalt).
