I just talked to the mechanic. The car is fixed and the suspension back together, ready for corner balance and alignment!

He was able to chisel the rest of the bolt out bit by bit and then once he got enough of it, the last part fell out. He ordered a long heli-coil so there is full thread engagement in the hole and then torqued it up no problem. He feels its as strong, or stronger, than the original and should cause no problems going forward. He said it all came together very nicely and he was quite happy with the result.

He chose a hell-coil over a timesert based on his experiences using both as well as the fact that the timesert would require grinding out more metal, which he wanted to avoid.

I pick the car up on Friday and will get to see how she feels with an all new suspension. Can't wait!

Thanks guys. I'm feeling a little emotional - the relief of having it come back together correctly makes me realize just how worried I've been for the past few weeks. I think I'll sleep well tonight for the first time in a long while.
