I'd just avoid I-5 all together, but incorporate a few of the suggestions for "fun" detours. Take 101 out of LA - do the 154 detour (exit just north of downtown Santa Barbara, go over San Marcos Pass and by Lake Cachuma. Reunites with 101 just north of Buellton. When you get to 198 and 101 (about 10 miles before King City) take 198 east until you intersect with 25 - take a left and follow North through Hollister until you reunite with 101 just south of Gilroy. If that detour is a bit much, Try the Jolon Raod loop - exit 101 to the west just north of Camp Roberts and follow it until you meet back up with 101 in King City. Lots of options that get you where you want to go with some nice scenery. Just stay away from I-5 (don't even get me started on semis passing each other with about a 0.01 mph speed differential with only 2 lanes in each direction!).....
