I wouldn't change the oil with 700 miles on it. If you do decide to drain it, be sure to get an oil analysis so you can work with facts that pertain to your engine and your driving style.
Acids and other contaminants can potentially harm the engine. Not sure how long the oil has to sit before it does noticeable damage.
I was told by my Porsche service advisor years ago that the factory recommended interval for 993s changed to every 2 years or 15,000 miles, so that is what I have done.
Still amounts to an oil change every 3000 miles. I don't see any reason why oil which sits in your motor for more than a year would go bad.

I'm not worried about the oil change. The lack of use is more concerning.
Perhaps I'll get winter tires and go back to the stock suspension height

When I bought my car last October it had 1000 Kms on an oil change per the records. I just left it in there and put just over 3000 Kms on it this summer. Had it changed just the other week. I think the usual thought is that you don't want the contaminated oil sitting in the car, but with so much oil, and so little Kms I can't see synthetic oil getting that nasty. I for sure change the oil in my bike/ ATV before winter storage, but they hold far less oil, and thrashed on a lot more.

Now if it ran over $100 a jug as it does in Europe where cars are driven to the limit and oil changes happen every 12 to 15 K miles, people would wise up...just like that wise man.

Don't waste your money on a 700 mile oil change.
Do an oil analysis if you must have data to prove your oil will go 2 years.

Before you put it away for the season make sure you got it up to temp for say 30 minutes. You want any moisture to be evaporated out. For instance if you put the 700 miles in the beginning of the season it sat through all the temps swings and condensation can accumulate.
I don't see a problem with using oil multiple years.
