Was thinking about keeping in the analog, VDO family. I have seen 2inch voltmeters, CHT and transmission oil temp gauges previously. I have to be honest though - other than the voltmeter, this would be more "fun" to monitor and look at than actually use... just nice to functionally use up some the of real estate created by the radio delete plate!
If you're going to be tracking and are serious about wanting to know what's going on, I would install a EGT (exhaust gas temps) gauge with a multi point switch so you could monitor the individual cylinders for temp issues (tells you whether or not you fuel mix is correct, or if you're having other combustion issues). Do it in a bright digital form so it can be seen since it is off sight line.
Exhaust gas temp, cylinder head temp, voltmeter, outside temperature. My 993 has the on-board computer so I went with CHT & voltmeter in the factory cell phone console. Exhaust gas temp required welding sensors on the exhaust.
