Weight loss for a 993
Without going overboard and turning a C2 into a RS, what can one realistically do to drop weight on the car and how much can it add up to? If one were to redo exhaust, rims, and single mass flywheel, etc., can one get the car to around 2800 lbs or less?

One can get a car to 2800 pounds, but not just with the items you listed. Also, at some point, you compromise day-to-day driving livability, depending on how much weight you wanna shed. Given a nice diet, you could probably knock 100-200 pounds off a 993 without much trouble, expense, or compromising all the comfort.
If you're looking to drop weight, you also might wanna replace are the stock seats, which are unusually heavy, with lighter ones.
There are some who've got their 993's down to 2800 pounds, so maybe they'll chime in. There's been plenty of chat on this before, so perhaps you might try a search as well.

Previous owner did the following to what is now my track car, just to give you an idea of the potential, and acknowledging you are asking about street use:
200 lbs. removed when carpets and door panels replaced with RS version, Moton Clubsport shocks (lighter than factory?), Optima battery, lower dash/rear speakers/seats/belts removed, race seats replacing stock fronts. That would be 2875 dry/no driver, I believe.
Then put in a full welded cage, which added weight back in (@100 lbs.).
No lightening was done of body panels, bumpers, etc.
So, its not easy to get much weight out, especially without spending lots of $, though every bit helps.
I am a firm believer in going the lighter is better route, though I can't see why it would matter much on a street car. How about changing the gears Now, that really got my car going.

I am at 2900 (full tank) by doing the following: LTW flywheel, dry cell battery, no rear seat/seat belt, no rear deck/speaker, no jack, spare or toolkit, no trunk carpet, no lower dash,fiberglass rear lid, RS door panel, RS carpet kit, no rear blower, and other small bits.
To get to 2800, I would probably need to replace the stock seat, cat bypass or sport cat, ltw muffler, fiberglass hood, ditch the AC.

Kim got the yellow car down to right at 3K when building it, and pretty much everything is removed. No free lunch without going to unstreetable measures............. I will say that taking RSA #1 down to minimum club race weight of ~2750 lbs made it much, much livelier.

Dropping weight on a 993 is tough. So far I've done the following:
- removed windshield washer system
- cat bypasses
- RS heater tube
- fiberglass hood
- Wevo engine mounts
- removed rear seats and seatbelts
- removed spare tire
In the future I'll do the RS flywheel/clutch, lightweight seats, and light battery. I was at 3,075 pounds stock and figure I'll be under 2,900 pounds when all is said and done (my conservative back-of-the-envelope calculation of these items adds up to 190 pounds of weight loss). There are no big single items that save weight -- it's all about increments. I'm not going to remove the AC or sound deadening and am not sure what else to do beyond this list.

I might as well remove my AC. I haven't had a belt on the compressor in over 2 years.
I recently installed a LWF myself. While the engine was out I removed all of the engine sound pad which was half gone anyway due to a rodent. Probably didn't save too much weight but it did make the engine compartment look nicer. And I have not noticed any ill effects as far as sound is concerned. If one is going to through the effort of doing a LWF and possibly cat bypasses, I see no real reason to keep the sound pad. I don't know what purpose it serves in the first place.

I suspect that engine sound pad is really an engine heat pad -- it helps keep the heat of the engine from soaking through to the cabin. Plus it probably reduces the decibels, ever so slightly. In a cool climate, it probably makes sense to get rid of it.

My C4 weighed in at 3099 full tank and no driver:
Recaro pole positions (no sliders on driver side)
LWF
KWV3 which saves up to 5lbs per corner
Enkei nt03 track wheels which are 19lbs
Spare left in.
The AWD adds 110lbs.
I would be willing to:
Switch to dry cell battery (Odyssey 925, waiting for battery mount)
RS carpets after ripping out sound insulation, rear seats, rear shelf.
lightened muffer
lighter cats.
I'd be close to 3K while keeping the AWD which would be my limit in regards to keeping it a street driver.
After that, the compromises are too much for me such as:
No AC, no heat, no muffler.
So i think 2900 would be acheivable in a C2 while keeping it what I'd consider a comfortable street car.

Simple weight reduction I have done so far puts me about 52kgs or 114lbs off stock weight. You could do all this in a weekend, with no special tools, and nothing to buy - except the exhaust and heater bypass pipe. Car is as streetable as stock.
I'll be doing front seats next and most probably RS carpet - will probably save another 60-70kg's with that or around 130lbs. It would be nice to shed around 120kg's or 260lbs off the beast. Only problem is - you start thinking how else you can shed a few more kg's off - cf hoof, retractable spoiler, wheels, lighter doors - man - steep slope starts again.
• Spare tire (weight= 12.50kg)
• Tool pouch(weight= 1.90kg)
• Jack(weight= 0.98kg)
• Air compressor (weight= 1.16kg)
• Trunk carpet (weight= 2.26kg)
• Wiper washer bottle (weight=1.70 kg)
• Water from washer bottle (weight=6.30kg)
• Passenger airbag (weight=3.56 kg)
• Floor mats – 4 mats from rear and one from passenger (weight=2.28 kg)
• Rear seats R – back cushion only, bum cushions remained glued (weight=2.22 kg)
• Rear seats L – back cushion only, bum cushions remained glued (weight= 2.18kg)
• Rear seat belts – including seat belt buckles (weight= 2.18kg)
• Sound deadening from behind rear shelf (weight= 0.68kg)
• Rear speakers (weight= 0.30kg)
• Engine tray (weight= 3.28kg)
• Catalytic converter (weight= 10.93kg)
• Rear blower fan (weight=3.18kg)

A lot of the weights posted on the list trophy compiled from the archives I don't trust.
Decklid and hood shocks each weigh a pound? I doubt all four of them together weigh a pound. The first list says you save 12 pounds with RS door panels, the next says 20. A lot of these are clearly made-up numbers.

For accuracy I just weighed the hood struts, they each weigh (front or rear) 6oz each (total of 24oz), so you are right definatley not a lb front and rear but every oz counts.
I am working on the items I have removed from my car and will post when all weighed up
