I hate to say this, but this sounds like snake oil. You probably don't do this in other cars you own - do parts of their systems fail regularly as a result?
My 993 AC is always on, just like my Audi and my wifes Lexus. The CCU takes care of it as any other modern car. It is designed to work that way. Check your manuals.
Turning the AC off before shutting down and starting it after the car is started comes from the old days of manual AC units to take the load off the compressor while starting and to avoid damage to the solenoid. With climate control units, there is no need for that anymore.
I'd like the option of being able to turn the a / c off and just bring in cool outside air with the fan. On our other cars, (VW, Audi, Subaru) there is an override. But this is a minor nit.

I turn everything off at shutdown, both in the 993 and in the redneckmobile. I forgot once, and the A/C in the 993 kind of "lurched" back on when I cranked up the car, almost as if the blower started up before the vent flap opened or something.

I think some of us do this as a sort of "ritual", a shut down procedure, perhaps left over from the "old days". In the 1966 Maserati that I owned in the early '70s, there were three toggle switches for the ventilation system blowers alone.
