How can I tell if it's a C2S or a C2 S conversion?

Lots of good information posted already. You might check the rear fender welds. The original coupe was not wide bodied like the 4S and turbo. Therefore, any conversion would need to have the fenders modified, and I doubt the quality typically would be up to factory standards.
Finally, let me add the following quote from the PCNA press release from 1997:
"Among the Carrera S's unique identifying standard features are a split rear spoiler grill, 'Cup Design' 17-inch alloy wheels.., steel grey door sill panels, instrument rings, shift lever ****, hand brake lever and push ****, textured black leather dashboard center and door panels, and Carrera S inscription on the rear deck lid."
The above was for cars imported into the US market. Since you have a European version, your options may not match perfectly, but I would expect them to be very similar.
The suggestions to call Porsche with your vin and check the option sticker on the hood are excellent. The option codes are also in the warranty book, if you have it.

The Carrera S (C2S) came with the hollow spoke 18s (technology-spoke) when they came with the 18 inch wheel option. (You don't see too many in the US that came with the standard 17s.)
option code for the hollow spokes is M408; which corresponds to the code on my underhood options sticker.
Technology = hollow spoke
8x18 ET52 (Front).......993.362.136.00
10x18 ET40 (R-WB).....993.362.140.00
The other way you'll know is by your VIN, in your VIN there are letters and numbers that tell you it's an "S" or not.
I can't say for sure that the suspension on the NB and CS2 are same. The brakes are definitely the same, but I'm not sure about the multi-link suspension.

Not all "S" models have the S on the tach. Not all States put the sub-model info on the title, as in NJ where it says "911".
