Thanks for the input guys, i have had this issue for 12 years and replaced the sender three times. I always used 15-50 oil until my last oil change (could not find it up here then).
Only put on 1k miles a year will put 15-50 in next time.
I am thinking problem is gauge,. Any way to test that or is there a fix?

thanks for the offer i am pretty sure its the gauge, i will just source out a used one or get mine fixed, i can do that in the winter as i don't drive it then.

I have the Fisters with Fabspeed 200 cel cats on my 993 3.8L build and have no problems with Mobil V-Twin 20w-50 and great Blackstone reports.High zinc is needed for air cooled V-Twin Harleys and 993's. Check
Porsche and Mobil sites to see recommends. Run Mobil 5w-50 in my 997.1 C4S that has same Fisters and Fabspeed 200 cel cats with no problems.

If you don't trust your gauge send it out for repair...just for piece of mind....but I doubt that is the problem.
Replace your 0-40 with 15-50.
I would not use 0-40 unless the ambient temperature you encounter is mostly below 15 degrees F.
Air cooled engines operate at temperatures which vary more than water cooled engines and the aluminum case has a different coefficient of expansion than the steel crankshaft,
Engineers design for this in setting clearances.
This is why Porsche specs higher viscosity oil for their air cooled engines.
