Three Wheelin'
I think JPS's build sounds pretty good. I know if I had the engine apart to this level I'd be replacing at least as much as he has. I think in the long term. If I'm going to do it, I'll do it right so it'll last for myself (and my children, and my grandchildren).
The slip-in vs bore is a tough decision and I'm sure he made the best decision he could based on his research and mechanic's advice. Personally I would have probably gone with the bore in, because I trust SteveW and I wouldn't want to have any doubts whatsoever after the fact. 2k is expensive, especially when added to all else that needs to be done, but for me it would be worth it.
I do understand the need to draw the line somewhere, however.
I'm sure the final product will feel fantastic and I can't wait to hear about it.

If the rest of the engine was healthy, nothing would be wrong with fixing just a cracked valve. But this engine was burning massive amounts of oil because all the guides and valve stems were worn. When you tear down an engine that is worn in many different ways, you address everything while it's apart.

Do you have to take you entire yard apart every time you replace a picket or post? If a picket or post fails, could it potentially destroy the entire fence?

Ok, lets Ring Fent (See what i did there ) this part of the discussion and refocus on the rebuild...
Nice work JPS, looks like you are going to have one great engine.
