FWIW, I went full bordeaux interior and have zero regrets. It's stunning and not as flashy as lots of people make it sound like. Gives a nice feel when I'm driving but isn't too much in your face.
With an exterior color like shade green, I think something more like the Black / Limestone Beige interior would work with it. Bordeaux goes well with exterior colors like GT Silver, Chalk, and White.
