Thanks everyone, I appreciate all the input and have cut a bunch of the fluff. I was considering the Burmester but just heard it wasn't that great, I figured if I was unhappy with the Bose I could just upgrade it after to something great. Ill be in SC and hear the roads are terrible so I figured it was better to have the FAL just in case I need it. Open to any interior suggestions, I thought the graphite looked nice with the arctic grey but was considering the slate and chalk as well with deviated slate centers

I would drop PDCC and Innodrive. Save that stuff for the Panameras and Cayennes. Leave RAS. Better to just get it versus not and wonder how it would be if you had it given that you aren't under much of a budgetary constraint.
I suggest adding the mirror base in matching color and passenger side cup holder trim in leather.

It’s been said 100 times, but go with what you really want - but if you are looking for some else's opinion:
1. The standard interior looks/feels cheap for a car approaching $200k (just my opinion, apologies if that offends anyone)
2. I have the GTS interior w/ red stitching and love it. I changed to the GT steering wheel in leather, which I love. Changing the steering wheel to leather also changed the shift boot to leather (I have the 7 speed manual). This is one way of reducing your concerns about the racetex durability.
3. I have the aluminum pedals, and you see them every time you get in and out of the car, worth the $600 for me to see that upgrade.
4. The most underrated exterior features to me are the carbon mirrors, which felt a little rich at $1,600, and the exclusive manufacturer exhaust tips. Both of those features are uncommon from what I’ve seen, and in my opinion really add something special to the look.
Enjoy the build process, it’s one of the best parts of getting a 911. I can’t wait for my next one to go through all over again.

I have a GTS with the gloss black exterior package and think it looks great, full PPF and ceramic on the car as well. You do get gloss black wheels as well even though all the Porsche documentation says satin.
RAS is very convenient with regard to low speed maneuvering, my track skills are not good enough to comment at higher speeds. FAL is also worth it IMHO, did not have on my last 992 and wonder how I did without.
Never had or experienced PDDC, so can’t comment.
I would spend what you can afford on the interior, I have been in base interior Taycans and Macans, dealer loaners and events, cheap look and feel. I’ve got an EM interior in the GTS, but the extended leather with deviated stitching in my previous C4S looked awesome. Another “relatively” inexpensive upgrade is the racetex roof lining, looks classy. If your not tracking your car, 14 ways work, had them on my last car, the adjustable bolsters are the main difference.

For me, it was a must have option along with a manual transmission.

I went back to the dealership this weekend and made a bunch of changes. Namely, I changed the color to black on black with the blue contrast stitching and removed a bunch of other extras. Just wondering if any one has any advice/opinions, thanks so much!

But would also get rid of every thing in high gloss black. You have the wheels in Satin so no need to go high gloss with every thing else. Plus- then open yourself up to the high gloss paint in those exposed area getting scratches ect
If i were to order again I probably would not get the Rear wheel steering. I think you only really notice it in tight parking spaces but I would not throw my money at that again.

The blue will look nice as well if that fits your eye.

Will add a note regarding the glass sunroof. I have one on my Carrera and opted for the metal sunroof on my GTS build (freezes next month). I find the glass sunroof to be extremely noisy when up at 80+mph. Might be just my car, and while the glass roof looks nice, the wind noise is annoying enough that it's not worth it for me.
