The model is encoded in the VIN and so you would know whether or not the centerlocks were standard equipment, but you wouldn't know if the car was optioned differently. For example, someone tracking a GT3 a lot might have opted for 5-lug wheels to make removing the wheels trackside easier.

Sort of? It's not encoded directly in the VIN, but if you have the VIN you in theory could get the build sheet for the specific car (perhaps via services like this one, for example, which I have never used and have no idea whether or not they do what they say).

When I was shopping for my car a couple years ago, a local dealer sent me an incoming GTS build sheet asking if I was interested. The build sheet listed the 5-lug Spyder RS designed wheels as a no cost option.
Speaking to the GTS model here: I wager a guess and say if you do not see an option line for a specific wheel, then the car comes with the standard CL wheels.
