I will say this: Had the 18-way ventilated last car and they were very nice here in Florida BUT they are noticeably more firm feeling than the racetex non-ventilated in my current car. You would give up a little comfort on a longer ride but gain a cooler seat.

Not exactly. The cooled seats are colder when the a/c is running. I'm not sure how exactly it works, but I suspect they pipe cold air through the rear footwell vents to make the ventilation feel colder. If you turn the compressor off, you'll notice a difference.

I'm not totally sure when I would use just the seats and not them combined with A/C ( esp here in Palm Springs ) they are very very good, but I feel like the fan in the ones on my previous X5 were stronger.
Both are very good systems and a must have in hot climates

Oddly I prefer it to the non ventilated seats. For whatever reason I feel like the small holes add some interest to an otherwise flat piece of leather. Maybe its just me.
