I've had good luck with Leather Masters cleaner and conditioner as well on chalk and other off-white leather seats. As long as you don't wear super dark, new denim jeans all the time and you clean the seats every couple of weeks they should keep looking great for years to come.

Gorgeous targa, congratulations. I do like the contrast in the seats from the slate inserts.

Haven't seen that combination. With the gray shading in the chalk I'd expect that not to be the best combination. Porsche's two tone interiors that include chalk have been black/chalk and slate gray/chalk and I suspect those to be the best. I'd be reluctant to combine a bright red and chalk without seeing it in person. The configurator doesn't provide good/reliable images of the deviated seat center options - and doesn't provide one at all if you don't have the 3D option.
