I don't think you'll notice much difference between RAS and non-RAS, not from personal experience just what people said on Youtube reviews.
I sat in the non leather version and I realized it's more than adequate for me. It's actually much higher quality than you'd expect.
Here is what I have ordered; my lock date is on Monday and am going back and forth between adding the RAS and downgrading the seats to 4 way (even though I currently have 14 way)...

My 991 is non-leather and I agree, but am going full leather this time.
Definitely full leather. A 911 Carrera not only deserves it, it needs it.
As to RAS, it’s nice to have. But not crucial especially if a majority of your time is putting around town. It’s not transformative by any means. But still nice to have.
I'm torn whether or not to add full leather (black with chalk stitching), and rear axel steering; I have 2 days to lock and am on the fence about both.
I'm in the non-leather camp not because it's not nice but I worked to a budget and this ended up in the 'not adding to the driving experience' box. The standard interior is fine, although as always full respect to others' perspectives.
