ok I'll admit it... I love that interior color. Wouldn't do it with silver like that but that interior on gentian blue or white or red would be killer.
Just another perspective, I went with Dolomite Silver over Graphite Blue. The blue is pretty subtle in person but compliments either of the silver offerings well. Here’s a picture for reference:

GT SILVER / full black leather interior
GT SILVER/ full truffle brown interior
Crayon / full black leather interior

Well, since you've solicited opinions, how about an EXPERT opinion?
Among the three options you listed, I'd opt for GT silver with the full truffle brown interior. That latter, IMHO, is unique; it would be my first choice, always. Black leather, on the other hand, in combination with the dark headliner, will turn your Porsche into a cave. You can get a sense of that from the photographs available online. You may prefer that sense of enclosure, but I don't and would seek to avoid it. Also, wrt Porsche's new Crayon color, to my eyes it seems "washed out," on a 911.
I am biased. I chose GT Silver with a black interior and the brushed aluminum trim as a brightening accent. Dealer referred to it as a fairly typical build. Sometimes things are more common because they work.
I must admit I like the truffle option also. You really can’t go wrong with these options.
I don’t really get the interior of this new car. It’s all over the place, like an amalgamation of different 911s from every era. I think to keep things grounded, black interior with minor modifications (lighter colour stitching, seat inserts, etc.)
Apparently, I am the only one that thinks truffle brown is the exact same color as dog s#it..... Or that mixing silver with brown is the most horrid color combo possible.......

I had graphite blue on my 991.2 and it gets boring. If you ask me, Slate Grey is an underrated interior color that you should definitely consider. But in terms of the options asked I’d go with GT Silver on Truffle Brown. On a previous 997 I had what was called chocolate brown interior and it was never boring.
I’m not a fan of crayon. It goes beige in some lights and lacks the premium feel. Again all opinions.
