Some did it for the 997, but for the 991 generation the hardpoints to attach belts are missing due to weight reduction. So you're looking at welding something to the frame to be able to put seats back there.
And if you are in an accident and there's any injury to passengers in the back seat? I imagine the insurance company would deny it as those cars are not DOT approved or tested. (speaking of the US market at least)

with a young 6 month old myself, gt3 is out of the question for a long time for me. Too bad because it ticks every other box with a manual.

There is currently a poll in the GT3 forum to sort out the men from the ladies where some want no wing and a backseat (I'm in that group) and others who think even removing the wing is sacrilege, don't even bring up the subject of back seats.
Since even the GTS is turbo now, the GT3 is the only NA high performance 911 you can get--and it has 500hp and revs to 9000. Most of us don't care if it says GT3 on the back or not--we just want that engine attached to the 6-speed from the 911R. And beyond that? We welcome your votes, as this forum is a more general sample of the market compared to the hardcore GT3 crowd.

This started because of the heavily rumored Touring Package which sounds like it will remove the wing, but probably not add backseats. Nothing confirmed yet, so everyone is guessing/hoping.
Come on over and vote if you want to see a GT3 "Dad Edition" or vote to proclaim that a wingless GT3 is an abomination.

My recent Automobile magazine has an interview on page #122 of Porsche North America President and CEO, Klaus Zellmer.
He indicated that the biggest gripe among Porsche dealers is not getting enough cars allocated, specifically 911's.
"We're short, consciously short, on 911's because we'd much rather under deliver, under supply."
To what extend do you want to do so?
"Now the formula actually is that we want to deliver one car less than the market is willing to take. That doesn't always work, but that's our principle we work with. What else would a dealer ask?"
"They'd love to have more Macans because that car is really strong. We are bringing new people to the brand. Close to 70% of the entry-level model Macan buyers are new to the brand."

Let's say Porsche could offer the engine option on a GTS (engine option and GT3 PDK/6MT).
so everything else would be GTS except the engine and transmission.
Could Porsche still make good money if it was a $15K option?
Would it mess with their CO2 emissions pool? I can't think there would be that many takers that it would matter too much in the scheme of things.
Would it mess with their GT3 sales? Again, I don't think so.
I think there is a strong market for GT3 specifically those who will track the car so they won't downgrade their track car.
But there is another market for someone that prefers the NA high revving engine but just want's a GTS.
Much like the 911R is not really meant to be a track car. I'd bet a good number of people would upgrade from their 991.1 GTS or any 991.1 if they prefer the NA and not the turbo engine.

I've never seen one in person, but from the pictures, it sure looks like some form of NACA airfoil, inverted, which would create lift in a downward direction, or downforce.

Yeah seriously, the wings create downforce. I guess technically they do both: first they reduce lift to zero, then they provide 250 or so pounds of downforce. My gt4 produces 220 pounds of downforce according to Porsch, and I believe the 3 is a little more than that.

I would take the equivalent of a sports purpose car/993 RS. No options, biggest engine. Race seats. Narrow body. No electronic anything other than the engine. 6MT. Come to think of it, what I want is an RUF. If they would sell me a cup car for the street without a cage I would have that. Give me a single DIN radio and two speakers. No carpet just removable rubber mats, cheap door panels with pulls, manual windows, manual locks, no nav, no alphabet soup. Three pedals, a big engine, and a seat (or two). I daily drove an Elise nearly 20k miles a year for three years including snow and ice which almost no one does. For a while I even had the sound deadening out of my exige S when it had the track only sports exhaust (that was a bit much). But I am different.

Yup. And it can have the front/back of the GT3 or GTS, I'll take it either way. I'd probably prefer the GT3, and who knows it might be needed to support that engine anyway. (radiator setup in the front, bumper for the exhaust in the back)
