I think Porsche did a great job on the 991 Cabs, the 'closed' roof line is very close to the coupe. I do have a 991.2 Cab, but I still think the coupe is just a wee-bit better looking, but of course that is just IMHO. But having said that if I was to buy another it would still be a Cab.

Ditto regarding the "wee-bit better looking"... but I would preface that "with the top up".
Hard to beat the look of a 911 with the top down IMHO.
Good call on going with the cab. It helps to go all in on the cab life. Top shouldn't just go down on nice days. Just traded in my 997 guards red cab. Had a 2002 BMW 325 cab years ago. So long as it wasn't raining the top would go down. At most, all you need is a down jacket and hat, maybe gloves, crank the heat and you're good to go. Get some new shades that stay in the car. Loved driving with the top down at night, early morning, and even when the fog required the windshield wipers to be on.
I can't do convertibles. In California it's always too nice to drive around with the top up. Consequently due to whiteness and not wanting my face to look like a baseball mitt when I'm 45, I have to use sunscreen for even the shortest road journey. It's terrible.

I love the idea of a removable roof and the wife's C7 is probably one of my favorite targa's on the market. My issue with the 911 Targa is the all glass rear and the line separation caused by the b pillar. If the Targa looked more like the coupe, I would have gone that route even if the roof had to be removed manually.
I'm extremely picky about convertibles and while I know many love the cab's, it's just not for me. However, I would take my opinion on the cab with a big grain of salt. There are very few cars I would opt for in a cab over coupe or targa purely based on visual preference.
I just went through the entire hand wringing process that the OP did and bought a 2014 911S Cab. I don't have possession yet but expect to be very happy with it.
Upon test driving it compared to a coupe I was surprised at how coupe like it was.
Slightly noisier, mostly in a good way because you can hear the exhaust better.
If it was softer in ride it was hard to tell driving normally on the street.
Other than the extra cost I did not see much of a disadvantage at least for my current driving needs. Depending on the top fabric chosen, I think cabs can look sharp even with the top up.
