25k miles in my 981. I've used normal mode and sport mode for about 2 of those miles just to see what it was like. It's always sport +, PSE on and PASM in sport as soon as I get in.

Also, here is a thread on planet-9 on the engine's thermal management system and warm up times in different modes.

I drive is sport mode all the time. My warm up consists of starting the car and waiting until it idles down on it's own before I drive away. Then I don't jump on it until it is up to 194 degrees.

For those with GTS or optional center (3rd) radiator, pressing the Sport Button opens up the center radiator. When not in sport, it only uses the side radiators. In the winter, I'm guessing you wouldn't want to press the sport button until the car is warm as having more radiators = longer time to warm up. Other than, I drive in Sport 99% of the time. Only turn it off when I'm rolling in the neighborhood late at night.

Question... I have a 2012.5 c2s with spasm. How do I turn spasm to sport?

I don't believe that is true. If you look at the plumbing you will see that all three radiators are in series, there are no additional valves that kick the third radiator in or out. Also note that the radiators are cooling the water temps.

As for the engine temps cooling in Sport/Sport+ there is either an additional oil cooler or an additional path in the single oil cooler. I was told it's an additional cooler but haven't seen a plumbing diagram of the oil cooling system.

Bottom line, the coolant system does NOT have a valve connected to the Sport/Sport+ button while the oil cooling system does. I researched this fairly thoroughly as I will be adding a third radiator in my car this fall (and yes I researched the GTS and GT3 cars as well).

probably better question: when do you turn it off?

I turn it off on highways when traveling at a steady speed on level roads

Starts up in sport without having to hit the button.
You can also set it up to startup in sport with your exhaust in the quiet mode if your concerned about disturbing your neighbors.

Ok to turn it on if you forgot... not ok to turn it off. You should always have sports mode on, it's more fun.
I got news for you, car starts up with PSE valves open even in normal mode.

I'm almost positive this isn't the case with cold starts. The valves remain closed for 20-30 seconds until the car idle settles down, and then the valves fully open. That's regardless of Normal/Sport mode.

Edit: To add, if the car is already warmed up, it'll start with the valves open and will then immediately close again if you're in Normal mode, otherwise they'll stay open if in Sport/Sport Plus. But again, the valves remain closed during cold starts until the higher idle speed normalizes.
