Ideally, back in the old days, sports car was the general category for cars built to go fast. That would be simple for categorization.
You are right that these days, so many classifications for fast cars based on a number of characteristics.

I'm not a huge fan of the Proschius 918, Ferrari LaPrius, or the McLaren Prius1 though. They're awesome cars obviously, but for the price? I'd rather have a CGT, F50 or F1.
If it's pure speed you're after, with how fast a Tesla can make a family sedan, the gas motors and turbos and such will eventually be seen as a hinderance and the newest "hyper" cars will go fully electric. I'm just not interested in that.

My wife and I were having a similar conversation the other day. We concluded that the Mazda MX-5, Toyota GT-86/Subaru BRZ, Cayman/Boxster and 911 are all sports cars. But what about the BMW M3/M4 and Ford Mustang/ Chevy Camaro? How do those fit into the taxonomy?

Mustang/Camaro we can put into the muscle car bin, M3 definitely sport sedan, M4 sport coupe. I think the rear seats are too large to argue sports car, same with the GTR. That's not necessarily a negative, just that generally the "sports car" category is considered a 2-seater, and I think people generally consider the 911 a sports car because they aren't much of seats back there.

I would guess that most people who don't have a Porsche would put them into the exotic (sports car) category. Maybe "entry level" exotics, but still, not in the same category as the Corvette, Camaro, Mustang, BRZ, WRX, Miata, etc.

Sports ...no drama or multiple posts needed. It's obvious that not all 911s are created equal, but for the most part, they're sports cars.

It feels, to me, that hypercar is another new marketing buzzword, but equates to the current generation of super car. Also, why did they skip ultracars?

I'm not up on every car. Far from it. Yes, in some regards, in my mind, only, yes, it's based on price and attainability. Attainability to me is more about "availability and accessibility" and less about the actual purchase price.

I really do like the term "hypercar" when you take into consideration the hybrid technology of the current 918 Spyder. Seems to fit well for me.
I consider the ACR Viper a Dodge.

I think I read yesterday the Turbo S does a 2.5 second 0-60. True "hypercar" performance at a sports car price point. Porsche performance, engineering and reliability are amazing!
