I can see your point about not having a car that's too conspicuous. I'm in the same boat, which is why I tend to lean toward silvers and grays. Going stealth on the outside and bold on the inside isn't a bad choice. I ordered my .2 Cab in GT Silver with Bordeaux/Black. I did walk a bit on the wild side with a red top, though.

I almost got a Guards Red over Black. Stunning combo on the Targa, but a little too flashy in my community. So I wound up with an agate over agate, which, in the end, I actually like better.
You have me mistaken with someone else, I never chose sapphire blue with beige.
I already have a screaming red 458 Italia, I was looking for something more classic that wouldn't attract as much attention in the hospital parking lot.
I believe close to 35% of all Porsche's on the road today are either silver or some variation of silver. If you want your car to be "discreet", certainly silver would serve your purpose. But why bother with a Porsche since you have a 458 and you're seeking anonymity.
]I was going to get a Graphite Blue Targa with Graphite Blue/Chalk interior, but some photos of the Targa with the top down made the seats seem too white/bright, and the Graphite sometimes looked dull.
Then I saw a video review of a Rhodium Silver Targa with Red interior, so now I am thinking of Rhodium Silver with Black/Red.

I saw a GT Silver Targa 991.2, with the Bordeaux/black interior on the floor of the showroom. It was perhaps the most stunning Porsche combination I've ever seen. It was absolutely beautiful. I also saw the graphite. No contest.
Until then, I'd been a little 'meh' when it came to the 991.2. Not any more. Silver with the red/black is the move here. By the way; my 991 is rhodium silver. I love the colour, but think GT Silver edges it out.
I prob would go Sapphire. I have also seen Carmine in a Targa and it looked ace. Of the two choices given I'd do silver/red - admittedly less adventurous than Grapphite Blau - do like the idea of Espresso in that.
I am not in favor of cars with split color interiors.
Porsche used to offer an all red interior.
I would get Porsche Exclusive to get you an all red interior.
Before I got my Mexico Blue/Black 981, my order was for a GT Silver with all red interior which I had driven, it was beautiful.
So I did not vote.

Wow, just goes to show how different the world is. If the split red and black had not been available, and only all red like in earlier Porsches, I wouldn't have touched it. Porsche's monochrome interiors in the lighter and brighter colors look to me like somebody opened the door and shot the entire inside with a spraygun. At the very least, it needs a black steering wheel.
I think GT Silver works better with black/red than Rhodium. The Rhodium might work with the blue/chalk interior. Mine is Rhodium w/yachting blue and I think it very attractive. In my opinion, Porsche doesn't offer enough interior color choices.
