I plugged OBD2 to Bluetooth adapter in, and sure enough, even though vehicle gage never exceeds 194, water temperature continues to rise as reported on the bus

I've had this happen to me once, dealer acted like it was nothing and to bring it in if it happened again. It's been at least 10 months since then and it hasn't overheated since.

What's less German than a gauge that lies to you?

check old threads on the 996 from the late 90s to early 2000s ! I remembered rolling my eyes reading them back then since I had a 1999 996 .
