How to get into the back to clean
I'm 6'5" and find it a bit difficult to get into the back to clean the inside of the window or vacuum the carpeting. Any suggestions/insight?

Check places like Groits. I've seen things that look like a miniature mop on a short pole to clean windows. Be thankful you don't have roll bars to contend with.

It would be nice of the front seats would flip forward all the way instead of stopping at about 45 degrees like they do

The only other idea would be wife, kids, or girlfriend. If you use the latter make sure the former is not home.

Burning Brakes
I have a window cleaning pad on an extension as LexVan described, gets into hard to reach places. I think I got it at one of the popular auto parts stores. I'm only 6' and it's a pain to crawl back there.

I am 6'1" and its not pretty. First fold the seats forward, and then slide them forward, do this for both seats. Place whatever cleaners you need (windex, leather etc) in rear footwell of the passenger side. Climb into the rear driver side seat and clean or condition whatever you need to on the passenger side. Fold down the passenger rear seat to get a little better access to that side of the car in the back. Once done repeat for the other side. Sometimes you can also fold both of the back seats down and sit on top of that, although I would put a heavy soft towel between the back and the bottom of the seat to keep anything from getting dented.

In your case, I would get the backseat cleaned by a professional car wash.
