911 to jump start another car ?

Sure, the 911 can jump a car just like a toyota camry can, there's nothing special about it. + to +, - to -
I tend to hook directly to battery terminals, as ground lug posts and all that tend to introduce a lot of unnecessary resistance. YMMV. The 911 uses an 80 or 92ah battery stock, so maybe have the 911 at least idling and leave the jumpers hooked up for a minute or so before trying to start the cayenne, depending on how dead it is.

People still use cars to jump other cars? I thought everyone nowadays carry or have at home a power/battery pack to start dead cars.

Haven't carried jumper cables in years since we have a battery pack in our vehicles. They work, and are fool proof.
Also, if needed can be used to charge a cell in an emergency. They work in -40C/F weather no issues, and hold a charge all winter.
Charge them once a year. They always seem to be over 80% charge when I 'recharge' them.
Have 3 sets of jumper cables in the garage collecting dust.
But to answer the OP: I would just just off the battery in the normal manner as any other vehicle.

One thing to keep in mind is that it is recommended that the donor car not be running when jumping the dead car. Modern cars with electronic voltage regulators are susceptible to damage when two alternators are generating power on the same circuit feeding two different batteries of varying states of charge. Think of the donor car as a booster box. In other words hook up the cables to the good battery, start the dead car and disconnect right after starting.

I would go the extra mile and disconnect the battery from the 911 first, no need to take out.

There's a lot of overthinking going on here. When you connect the running car to the non-running car, the alternator from the first car will charge the second. If you connect things and let the 911 idle for a few minutes it will actually charge up the battery in the Cayenne a bit and you'll have an easier time starting it. As far as turning off the 911 before you start the Cayenne it's really not needed. If you feel better doing it, there's no harm. But I wouldn't give it a second thought.
