Oil Temp vs Water Temp Delta

Hi guys,
I've notice twice this year that my oil temp and my water temp have had a wide disparity between them. Today, 30 degrees Celsius - my water was 90C (194F) and I was having a slightly spirited drive from light to light but my oil temp was 106 degrees (223F). Yes, sport button was on. I only bring this up because typically they're both with a couple of degrees of each other 94C-96C.
After noticing I took up shifted and kept the engine at around 2k rpm on the way home, it dropped minimally during the 20 min drive home down a highway/parkway at constant speed - went down the 104C. My mechanic has told me that they should generally be similar levels unless at the track - again, I was driving in first to second gear spiritedly from light to light but not 5k rpm spirited, 4k for about 10-15 mins driving around the downtown area... yeah, being that "guy" - please don't judge I'm slightly embarrassed! Lol!
Anyways, my car is a 2015, with only 12,700 miles (20,500 km), manual, sports (not sports +). Should I be worried or take it to the dealership?

~275'F+ will break down the oil so be worried then.
220's is very average driving temperatures. Keep in mind coolant an oil are different liquids with different functions, cooling abilities, and useful temperature ranges.

Porsche has the MFD programmed lock in the displayed water temp sensor reading at 194 until the temp gets to like 240 or something (I'm too lazy to look it up) where you should start tracking it closely and then it starts showing actual temps again. So your in your scenario above, your actual water temp could be 223, but the display is going to show 194 until you hit the "start watching closely" number Porsche decided on.

I know oil temps and water temps have been discussed a bit.
I finally hooked up a Cobb AP and used the gauges.
I was surprised to see the Oil temps were reading 10-20 degrees cooler on the Cobb vs the car's gauge.
Is that common?

Drove around in sport plus today 3.5-7k rpm and the oil temp wouldn't budge past 207F with outside temp of 88.
Does oil quality have something to do with it? It was fresh and drained 2x - I recall going to at least 230 easily on a hot day.

A very astute owner/driver, will definitely notice cooler oil temps early on in the oil change interval. With fresh Mobil 5W50 in my car, I see about 5-7 degrees cooler oil temps for the first 1,000 miles or so. Since I don't let my oil get more than 5-6,000 miles on it, I don't necessarily see the opposite phenomena (oil temps INCREASING) as the oil ages and accumulates mileage.
