Most do, yes! APR in particular loves messing with those mappings. If there was a 'right' way to do it, this is it IMHO. Basically the piggyback ECU versus standalone ECU argument.

Many autistic people (like me) have enhanced tactile feel (I can actually feel a pebble in the front tires on some of my cars), which is why I almost always have to have steering wheels made that have a certain feel and size. I also can feel drive by wire delay more than most. I also do not feel emotions so every thing
I do is based on logic and thought process rather than an emotional decision (which is why the willful suspension of reality does not work on me, makes movies hard to enjoy). I also do not fall for marketing or put much stock in what a manufacturer says (until I try it myself). The booster removes the delay, that is all I want it to do, and it does not matter how hard you push down the pedal, the delay is still there. Like I said you either can deal with the delay or you cannot, but it is there, that is a fact.

GM also used lighter throttle springs than Ford and Chrysler, further enhancing the feeling of performance, even though the actual ability of the car to accelerate was not increased one iota. Of course, this was in the Seventies, when Corvettes had well under 200 horsepower, so in the absence of performance, "perception" was all they could offer.

I put a Weber Big Bore throttle body on my 1981 VW Scirocco, The spring was SO light I had to add an extra spring to it.

As you know the SB works. I too have used it on every car I have purchased in the past 6 years, ranging from a 911 to a S7 to a 971 Panamera. As you know since you have used the SB, the comments about being able to replicate by just pushing the throttle harder and faster are not accurate. I had an EPL stage 1 ECU tune on my S7 and a SB install, the SB made far more of a difference in daily driving than the tune did, if I would have known this first I would have passed on the tune.
