Hello, I'm doing an oil change... after patiently waiting for the oil to stop dripping, I poured it into bottles and found that about 7.5 quarts (or slightly less) drained out...
The oil level indicator was at "minimum amount" (yellow indicator)...
Did I get all of the oil out? Since it will take 9 quarts to re-fill it?

I usually get 8.5 qts out of it and I'm usually in the green

Seems like the car was slightly low on oil to begin with. Put about 8 quarts in and use the oil level indicator to adjust if you need to.

Sounds like you did get "everything" out. The times I have done my oil changes, 7.5 quarts will put me right at the first green square. I usually need 8 quarts to be somewhere near the center of the green squares, and another half quart or so to get to the max level.
