How much I should ask for the discount without offending the SA? It is a 2018 911C2 with MSRP $112k. It is being listed as a demo with ~100 miles.
Should I start with 15% off?

is it CPO? When was the warranty punched? Where is the car located?

I have helped a couple other people here order new cars with a nice discount, and I ordered one myself, so if anyone wants a lead send me a PM and I will be glad to help you out. Keep in mind this is for an ordered car, not off the lot, and a 2019.

When I was looking recently, Atlanta dealers were not discounting at all on 2018 models on the lot. I bought a CPO car out of State with about 1k miles—2017 model,and got about $20k off original sticker—around 14%. Prob not a great deal, but not terrible from what I can tell. It was not a base model, but a 4S.

1. Is the car equipped to your liking? (Is it close to a car you would build and you could avoid trying to get an allocation)
2. If the price were right, would you buy it?
3. Is there other inventory around at other dealers to consider?
4. Is there a trade-in to consider? ( a good price on a trade may make things easier for you)
5, Is this his only base car on the lot?
So with all that, don't bid against yourself, and tell him you are ready to buy. Tell him to get his best price and get back to you. He is not going to take all the money off the table at once, you'll have a little room. Base cars are around, but they are not plentiful. If you like the car, and there are no serious alternatives to consider, don't let a couple of percent cause you to lose it.
I was able to buy by 991.2 in April 2017. Slim pickings then, slimmer now. My dealer bartered for my car from another dealer 125 miles away. I got a 5% discount and he took a tough to sell trade.

I think 10% would be good on an 18 with 100 Miles with a not insanely high MSRP on a cash/no trade deal.
If you peruse inventory, there are not a lot of 18s out there, especially base cars. There are some 17s with low miles which is what I would target if I wanted a deal.
If you are financing and have a trade, that’s extra money to the dealer so keep that in mind. Make sure to factor that in.
