There are quite a few here with 991s in custom colors. I ordered PTS Oak Green Metallic in mid-2017, and it arrived in late 2017.
Ordered October 2016, delivered July 2017. Viper Green, a 1972 911 color. Around $7K extra if you pick a color already on the approved list ($13K for GT3s).
PTS is the only way to get any green 911 since 2012 (to date). Same for browns since around 2015.
I had an '87 Venetian Blue Carrera I good weather DD from 1994-2001. Beautiful color. Just lovely.

I have a 991.2 in Aetna Blue. It was a $6960 option.
Venetian blue is my favorite vintage 911 color also, but it is not on the current approved PTS list. I even asked it my dealer if they would go through the process of getting the color approved and was turned down The closest approved color to Venetian is Yachting Blue. Beautiful color and there are photos of a GTS in that color in another thread. Still is does not have the silver-grey blue of Venetian. This is my '72 911S in Medium blue metallic and it is probably my second favorite Porsche blue.
I have the rare PTS White. It is a combination of every known PTS color every made. These are only built by the most senior Porsche Techs. They practice on the black, silver, and red cars.
I had a 928 venetian blue in 87. It was a popular color in late 80s. You can order any color you want on a new car but be prepared to pay way more that its worth and wait way longer that you ever wanted to. Its better to take whats available.

That hotel wasn't too shabby either. One of the nicest places we've ever stayed in. Asheville was one of the few places I've enjoyed as much as being home.
