When my GTS shows up in a couple of months, Pulling a wheel is one of the first things I want to try. Unfortunately I'll have to spend another $300-$400 for the torque wrench & breaker bar. I'm not ashamed to admit I have no earthly idea what 440 ft-lbs of torque feels like, so I can't fake it and say close enough.
I weigh 180 (yes, I'm trying to lose a little), and I had no trouble last month when I put my winters on. If you have the Precision torque wrench and breaker bar, the 42" length gives you plenty of leverage. And I never used my weight - when applying force I always pulled up so as to not put undue stress on the suspension bits. It's really no big deal once you've done it once...
Why would you want to do it yourself? Much less by yourself?
If your mechanically incline, this is a relatively straight forward process. CL gets a bad stigma regarding it's difficulties, but it's not hard just take a bit more time with the right tools.

I can change all 4 of my wheels in 60-90 minutes. I couldn’t get to and from the dealer in that little time, plus needing someone to help transport the other wheels. I enjoy doing it, and it gives me a chance to do a thorough cleaning. But to each his own.

I did it with my 5-lug wheels, and I do it with my centerlocks.

^^ This. Having the option to do things myself offers enjoyment not to mention $$ savings. I really enjoy tinkering with my car, and many tinkering prospects begin with wheel removal. Like the SOUL high flow cats I put on today. For me it’s therapy.
The steering lock keeps the wheels reasonably straight. Just don't turn the ignition. I have KESSY, not sure if that changes things. But all 991s have steering lock, just a matter of engaging it.
I made a couple of time lapse videos when I changed mine. I didn’t experience any issue with wheels turning when tightening up whilst the car was in the air.
