I hate sticking that stinking EZ Pass on my windshield - it is ugly! Anybody with a creative way to mount it in the least obtrusive spot or even hide it and still have it work?

Spray paint it flat black.

In Pennsylvania they now read plates so you really don't need it. The toll is changed without a penalty as long as your vehicle is registered with EZ-pass. Not sure if all states work this way.

I went by the tint shop I use and asked them for a small square of very dark window tint. They gave me a scrap piece for free. I cut it down to the size of the toll pass sticker with about an ⅛" border all of the way around and apply it to the glass. After it dries a few hours I stuck the toll sticker on it. This turns it just as black as everything else on the windshield. In the photo below, you can see the tint with the toll pass as a square on the passenger side of the mirror (left of the mirror in the photo). I don't have a more closeup photo right now but I can take one tomorrow if you'd like.
I'm not sure if your is a sticker with an RFID device embedded inside it like ours or a larger box-shaped version, but I think the tint approach should work fine either way... at least as viewed from the outside.
Edit: Wow. I looked online and it appears you guys have to use a big boxy device. That sucks. Ours is no bigger or thicker than a credit card. The plate readers mentioned by others are about the only thing that could be better. Looks like NY needs some newer tech!

I purchased the portable transponder for $10 and use the suction cups to mount it next to the rear view mirror next to my dash cam. A coat of black spray paint also does wonders to make it unnoticeable.

Mine is just a little sticker., maybe 1 x 2 inches. I have it in the lower left of my windshield.

In Massachusetts, you can't put it on the dash like Jinber shows.
However, apparently they now have an exterior transponder. You screw it on over the front license plate (assuming you have a front license plate, Stormrune doesn't). Reading it seem erratic though, since when I searched on it I turned up a fair number of threads about them not reading properly.
Your interior transponder must be mounted to your windshield, just to the right of the arm holding your rear view mirror and below any tinting.

Get the newest transponders. They are much smaller. They are about 1/3 the size of the unit shown in FiveRiversGTS photo above.
