I did a Launch Control start a couple days ago, and it did pin me back in the seat. Found an area like you suggested over the weekend that had very little traffic.
Also switched from using the PDK shifter to using the paddles in Manual mode. Sport + definitely the most fun in manual mode. I use Sport in auto mode if I have a drink in the car.
Gas mileage is down the tubes, however, but the fun factor has increased!

and you didn't even need to become a PCA instructor.. or a track guy.

Took her for a spirited run today in Sport Plus Manual mode. So much fun and hit the rev limiter on accident. Couldn't shift fast enough out of the hole from 1 to 2, oops. Haven't found a empty safe place yet for LC, can't wait to try.

Yep, that's the toughest shift. You want to hear it wind out a little more after 6500 and bang, it's only .1s or less to redline. You have to shift at 6500.
