I noticed today that my oil pressure is rising fast as I accelerate and then drops back down as I decelerate. At idle it stays around 17-20 psi then goes up to around 45 psi during acceleration and settles around 30 or so while cruising.
Is this normal? I have no warning lights on and it says my oil level is full.

Normal. The oil pump are variable displacement so pressure will vary based on load more than RPM.
