Does the new 991 GT3 have more torque than the current 9A1 motor that comes in the Carrera S that was deemed not fit for GT3 duty? I'm just curious!

Yes, the GT3 Engine should produce 348 Ft. Lbs of Torque vs the 325 Ft. Lbs from the present Carrera S.
Porsche does not give a GT3 Torque Value but you can figure it out as follows:
The C2S Engine produces 400 HP @ 7,400 RPM and 325 Ft. Lbs of Torque.
The GT3 Engine produces 475 HP @ 8,250 RPM. HP = RPM X Torque
Therefore the 11.5 % increase in RPM (7400 to 8250) would only add 46 HP to 446 HP.
The "Missing" 29 HP (7%) to reach 475 must come from a 7% Torque increase to 348 Ft. Lbs.
What we do not know is at what RPM Range the GT3's Max Torque is reached,
or its distribution through the Speed / Torque Curve until seeing Porsche's Dyno Data.

For the engine to make 475hps @ 8,250rpm, it just needs to produce 302 ft-lbs of torque at that rpm. (HP = Torque x rpm / 5252)
The torque figure for C2S was not produced at the same rpm as the peak horsepower. (Neither is the figure for the GT3)

Got this image from one of the videos - Drehmoment, I think means torque in German.

Even if the number is the same, the torque multiplication via the use of much shorter gear ratios and final drive will allow it to put down more torque to the ground.
