Take out the depreciation factor for a moment (because both cars, the Porsche and Lambo, will depreciate -- cars are not assets, they are sunk costs)
So with that out of the way, just ask yourself this one simple question, "which car do I like more?" Whatever your answer is, that's the car you should either buy or stick with.
Good luck.

I looked at the evo. Just didn't fit. It sounded great but it didn't have the same driving experience as the RS. If I even remotely fit in the car I would perhaps consider it. But then again for the price of an EVO I would prefer a slightly more refined vehicle

Before trading in you GT3RS rent a Lambo for a full day and drive at least 200-300 miles. You might be very much disappointed with Lambo after gt3rs.
Lambo looks cool and sounds cool but the ergonomics, the quality of the car and the driving experience might disappoint you.
Same thing happened to me some time ago. I thought Huracan perfomante was a great car and I was seriously considering it before I had a proper drive.

I did that couple of months ago, traded my 3RS 2019 for an R8 Spyder performance and have no regrets .. I have had multiple GT cars in the past , and you can always buy another one
I don't get emotional about my cars , because you can always buy another one
but having said that , don't do it to avoid depreciation, because that is the wrong reason and Lambo will most likely depreciate more because it has MSRP

Interesting, what didn't you like about the HP? I was thinking the same thing about one of those or a GT3 RS. I've had several Lamborghini's before
(SE30 Jota, LM002) so I know the brand pretty well. But I had heard, the HP was pretty well sorted out and a blast to drive.

Go cross it off the bucket list. I skipped the 991 generation and bought a Lamborghini. It's a different kind of fun than a 911, but you will find it fun for sure. The V10 is just awesome.

Lambo Huracan
pros:
- engine (sound and power)
- feels and looks exotic
- very good feel of gear shifts
cons:
- poor build quality including interrior
- poor ergonomics
- extremely uncomfortable seats (in comparison to Porsche bucket seats where I can drive for 600-700 km easily)
- low roof (I am 6 feet tall - 183 cm and I had a feeling that my head is touching the roof
- extremely harsh ride
Aside from that reliability has never been a strong component for Italians. It will also depreciate more than Porsche GT without any doubt.
Is it fun to drive? It is a different experience from Porsche GT cars. But if I were to look at something more emotional and wild I would go for McLaren 600LT, which is very wild and emotional drive and is hands down a better choice that the Lambo.

Great to know. Thank you. Had the looney looks and sound with the Jota and F40 so I totally understand. But it’s nice to get actual information on how the HP drives cause I’ve driven a Huracan but not an HP. But on Italian reliability, I’ve done 2 Gumballs and 1Bullrun in a 512M, 360 and 360 Stradale and didn’t have one problem at all. And trust me, they were driven flat out across country I’m very much leaning towards the GT3. Really appreciate your input.

It's a Volkswagen now.
