2018 991.2 GT3 10,500 miles, smoked once, brief puff of white smoke.
Smoke came on the 2nd start for the day. First start was cold (for California), then did about 10 mins of 55mph highway driving, shut down, car sat for 45 mins, started up again and got the puff. Did not smoke again all day (5 x track sessions, at most 1 cool down lap per session).
The other 5 GT cars parked next to me didn't flinch and had the usual because racecar answer.

It was from the exhaust. Definitely white smoke, but it hasn’t done it but that one time. I really think it was because I didn’t let it warm up from moving it out of the garage to post wash putting it back in the garage. It ran maybe 1-2 minutes each start cycle...

My touring has only smoked once and it was just a couple days ago. I got a new Sea Doo (RXT-X) and I needed to move a couple cars to get it into my garage. I only cranked the car up for a few seconds to move it. The next crank the following day lead to the smoke show. I’ve noticed the cars only really do it when they’ve been cranked for a short while and then allowed to sit.
Every single 911 I’ve owned (2 997 turbos, 2 991 GT3s, and a 991.2 Turbo S) have exhibited this behavior. It’s normal for them.

It is the engine configuration causing the oil smoke.
Boxer style has intake valves pointed upwards in an orientation that collects oil as it drains following shutdown. Oil pools on those intake valves, you start the engine and immediately ingesting that oil - so yes, you're burning a lot of oil, hence smoke
The solution is to drive the car frequently. This can also be another malady of a garage queen.

My 2018 and 2019 GT3 Touring's don't smoke (as others have also reported), so when some cars apparently do I'm not sure why it would be considered 'normal' other than a feel good statement. Metzger engines certainly were prone to this, but I've not had start up smoke in my various 911 variants from 2012 on.

2019 GT3 puffs a big cloud on cold start up, 1500 miles, never did this till I did the first oil service, with Mobil 1. Factory filter. I will start letting it idle longer before shutting it off, but lately I feel like I'm in my 87 Carrera again!

I think I figured out why mine smoked so much in that parking lot. I parked the car at a ~30-degree angle (side to side). I parked in the same spot again to confirm my theory and it did the same thing. Could this be the reason?
