Does the Touring Really Lose the Carbon Fiber in the Engine Bay?

Good catch. It's definitely a different piece than the standard GT3 engine cover. I would guess it will be plastic like the picture. They likely used the standard cover rather than make a special carbon cover just for the Touring cars. I don't believe the 911R had a carbon piece at the back either.
Is the wing the same as the R?
What does the wing look like up?
What does the area under the wing look like when it comes up?
Will there be a button that allows you to keep it retracted at highway speed?
Why don't GT cars have a mulching and bagging function?

I wondered about this as well. It looks like the above picture of the Touring engine bay (engine cover) is a pre-production version, so who knows what the production version will look like. Not a deal breaker for me either, but would be nice if it looked like the wingy car. My Touring is in Emden, waiting for a boat ride to the West coast, so hopefully will know later in December. I'll post pictures.

I finally found a few pics that I had to clip from a video... Not high quality but it gives an idea. Basically just a plastic surface under the wing... Touring should be slightly different, since it's not designed to vent air from the panel under the spoiler:

I guess it looks okay, but is someone actually watching their own car driving - from behind?
And what about the engine? In a 991 you only see it when it‘s broken and therefore out of the engine bay, otherwise it reminds me of the fans for CPU cooling in my PC -LOL.

I don’t even think carbon fiber looks good anyway. Most of the time when you see it it’s fake anyway, but even real carbon fiber is fugly. It exists because it’s lightweight. Bless it’s heart. But I just don’t get the fascination with wanting to see it.

None of these details make any difference to any decision I'd make, but I'm certainly curious as to the overall differences between the Touring and the regular GT3, and any differences between the R and the Touring. Porsche generally reuses parts between cars as long as they're functionally suitable, so any time they're different I find it interesting.

Also, note how much higher the touring wing goes up compared to the R. There was some chatter that it as cab wing height (apparently they go up higher). It should add more downforce at the cost of drag.

So 5 lugs would be a compromise over centerlocks? More interesting still... I'm not 100% sure what compromise means to you in this case.
