Have a .2 touring edition specced right after the official release and seemingly locked in for the last month. At the time deviated stitching was an option for the touring package which I had. Well just found out it switched to v170 status from v200 and in limbo. Prob because of the dev stitching but anyone ever heard of this happening?

On my first .2 GT3 Touring build I had also included the deviated stitching option.
My SA contacted Germany when he could not enter my order and confirmed it was not going to be offered on the Touring Pkg, so I've been forced to delete it from my build.

Yes... Happened to me... I was V200, then added something, and it went back to V170 for a couple weeks. More important are the estimated dates for the other status'...

Yes I expect that if I change something, but no changes in last month. I think it's the dev stitching holding it up and until I change it it may remain in limbo

Mine got bumped down because I ordered model designation delete which was on the configurator, but then was dropped as an option on touring (because there is nothing to delete). Just because it went in when deviated was on the configurator, does not mean it is offered and you end up in this situation. I doubt they let you keep deviated as you note it is not offered on touring (probably to further distinguish touring from a 911R).
