What trolley jack and jack stands do you guys recommend?

I've been very happy with the Esco 10498 stands. Very stable and solidly built.
For a trolley jack the aluminum ones from Harbor Freight are quite good and cheap. They're very light and I've found them to last a long time in home garage use. The 1.5 ton one has plenty of capacity for a non-SUV Porsche.

Jack Stands: Jackpoint (http://www.jackpointjackstands.com/) or Rennstands (https://safejacks.com/products/the-r...ck-single-unit)
These are easy to use with our cars and do not require ramps or blocks of wood to teeter totter all 4 corners up.
Trolley Jack: I think any low profile should be good.
Moveable Lift: QuickJack (https://www.quickjack.com/)
I use this exclusively at home.

I'm about to pull the trigger on the Esco 10498 (NON low profile). Any issues jacking up 987s high enough to get these under using the 4 officially recognized side jack points? ie can a normal jack get the back sides high enough to fit the 10498s at the front jack points? Hope this makes sense.

I use the Esco non low profile stands with lift bars and a low profile HF jack. That combo works great. I haven't tried jacking from just one corner as I have the lift bars and can do the entire side at once. I can get the car onto the lowest setting on the stands without driving onto other boards or ramps. If your jack has enough lift, you should be able to do the same from one corner. I have also used the same combo of jacks and jack stands (sans lift bars) on my wife's Honda CRV and my kid's lifted Jeep TJ. They are all very solid. Always remember to use some kind of backup once you have the car up (tires under the car, redundant jack stands, etc).

Hence, the LiftBars + 4 standard jack stands (mind the LiftBars instructions on type of jack stand) + a very low HF floor jack = my current set-up.
On LiftBars + std jack stands.
