10 or 15mm spacers on the rear and you should be fine.
I could be wrong, but the spacers you are suggesting would move the wheel out 10-15 mm with an effective ET of 37-32mm. The tires would stick out of the fenders. Adding 10mm to your ET65s would seem to work well and give an effective ET of 55.

I like my 10x18 Carrera IIIs which are ET58 and are near the fender lip with a 265 tire and a 275 should fit easy as well.

Check out this calculator. It works well.

I plan to try my 18" Kinesis wheels from my '85 928 on my 968 Cab(if it ever gets here!). They have 255s & 295s on them & I believe they are 9's & 11's. Don't know the ETs but they were ordered specifically for a 928 by 928 Specialists for one of their cars. I did have to slightly flare the rear of my car for them to fit, which I won't do on the 968 if needed.

Apologies - you guys are correct - I had it backwards. A larger offset (ET) means the wheel sits further into the wheel well.
