Hey,
There's a lot of 924/944/911 guides and checklists online, but I've been unable to find one for the 968.
I guess the most notable things I've noticed so far are:
Check the pinion bearing situation.
When were the belts last replaced.
Still, I'm sure there's a LOT more to look for than just that. And also, how can you tell if a pinon bearing is bad? (I mean, not if it is going to go bad, I know you can't tell, but rather once it's actually bad, what happens?)
Thanks guys, I confess to being a 968 nub...
'preciate the help!

The UK publication 911 and Porsche World had a 968 buyers guide issue back in July 2004 - Issue 124. While some of the info was UK-specific, it was a fairly thorough overview.
Back issues are available from their website - even for US readers (~$13.00).

Try this one, it will cover almost everything... I would add the ring and pinion and inspecting the variocam unit and camshaft gears to the list, and you should have it. A leakdown test is also mandatory on a ppi, in my opinion.
