Newbee Questions reg. 964 Engine Rebuild

Hi all,
I have used the search function but couldn't come up with a thread that covers all my issues with a 1990 Porsche 964 engine.
Firstly I am a little confused what this "no head gasket talk" is all about?
My engine seems to have no grooves in the heads, but there are in the barrels and there was a double sided graphite gasket with an aluminium ring sandwiched inbetween there:

Secondly, after cleaning up the heads I found the (ceramic?) exhaust ports to be cracked and chunks missing in some of the heads:

What can be done about this? Is there a way to rectify those, can they be used in as is condition or are they good for the scrap heap only?

I'm waiting with interest the response to your first question. On the second, regarding the ceramic coating, I've read that this is not uncommon and is not a significant issue. No direct experience.
