It's not terribly difficult, but it does take some time. If you like everything else about the car, perhaps it's worthwhile for you to revise the interior to meet your taste.

You could dye it yourself, or swap it out with another set from a dismantler. By the way, you should consider going to Hershey this coming Saturday to see probably the largest gathering of Porsches in the world, you may even see what you want in the lot with a for sale sign. If nothing else, maybe scope out other combos that would work for you.

I was planing on going to Hershey this year but last minute plans have changed that. Easter weekend is not the best weekend for this.
